These Cashew Butter Sprinkle Bites are no exception. They are made with healthy ingredients – oats, protein powder, dates, cashews, and honey. They are also made with sprinkles. Not as healthy, but exciting nonetheless.
As with most protein or energy bites these come together quickly. Just throw everything into a food processor and form them into balls.
Looking at the pictures I clearly need to work on my ball forming. A little lumpy. No biggie.
They are perfect for that 10am snack when you just need a little something to tie you over until lunch. Plus, they have sprinkles! So that’s fun! It’s like a mini snack time celebration.

- 1 cup roasted cashews
- ½ cup oats
- 5 dates, pitted
- 1 scoop vanilla protein powder
- 1 tbsp honey
- ¼ cup sprinkles
- Put the cashews in the bowl of a food processor and pulse until crumbly. This may take a minute or two.
- Add the oats, dates, protein powder, and honey. Pulse a few time until everything is combined. Continue to process if you prefer a smoother texture. Feel free to add honey or a little bit of water if it seems to thick.
- Add the sprinkles and pulse (or stir) until combined.
- Roll into little balls and freeze or refrigerate until set. I keep mine in the freezer and pull them out as I need one. Just let it soften a little bit first!
